Hida Beef starts with a place rule: the cattle spend their longest rearing period in Gifu Prefecture. The beef must come from Japanese Black cattle fattened for at least 14 months and graded 5, 4, or 3 for meat quality. On the plate, the fine, tender marbling appears in sukiyaki, shabu-shabu, steak, and hoba miso grilling with magnolia leaf, miso, green onion, and mushrooms.
The name Hida Beef has a practical boundary. The animal’s longest rearing period is in Gifu Prefecture; a producer recognized through the Hida Beef Brand Promotion Council farmer system fattens it; the animal is Japanese Black cattle fattened for at least 14 months; and carcass grading places the beef at quality grade 5, 4, or 3. When those conditions are met, a Hida Beef display label carries the quality grade, producer address and name, individual identification number, and date.
Gifu Prefecture sits near the center of Japan and covers 10,621 square kilometers, much of it forest. In the north, 3,000-meter-class peaks such as Mount Norikura and Mount Ontake rise with the Northern Alps. The landscape attached to Hida Beef is concrete: clean water, clear air, seasonal temperature shifts, and day-night gaps. Northern Gifu’s Hida region adds mountains, a cool climate, wide day-night temperature differences, and abundant water for farm and livestock products.
In postwar Gifu, cattle still belonged partly to field work. During the Showa 20s, cattle were kept as work animals; in the Showa 30s, farm mechanization pushed cattle raising toward beef; by the Showa 40s, improvement turned toward meat quality and weight gain. That shift puts fields, machines, and carcass quality behind the marbling seen at the table.
In 1981, the sire Yasufuku came from Hyogo to Gifu. His offspring achieved strong meat-production results, and Yasufuku became one of the named roots in Hida Beef’s development. The name therefore carries a breeding thread as well as a place: a bull, his descendants, and the work of improving meat quality over time.
The Hida Beef label keeps several concrete details together: quality grade, producer address and name, individual identification number, and date. Gifu Prefecture’s CowBell system connects the individual identification number to a Hida Beef quality-grade lookup, while Japan’s cattle traceability framework uses a 10-digit number for each animal. The number gives the beef a line back to the animal and its grade.
Hida Beef is described through fine texture, tenderness, marbling, aroma, and flavor. Sukiyaki puts sliced beef with egg and local vegetables; shabu-shabu briefly passes thin slices through broth; steak concentrates the marbling in a single cut. In hoba miso grilling, miso is placed on a magnolia leaf with green onion and mushrooms, and Hida Beef can be cooked on the leaf. The same beef also appears in skewers, nigiri sushi, croquettes, burgers, shigure-ni, curry, meat buns, and jerky.
Taken together, Gifu’s longest-rearing-period rule, 14 months of fattening, quality grading, mountain water, Yasufuku, the label, CowBell, and hoba miso grilling make Hida Beef a tightly anchored regional beef name. It is a Japanese Black beef name held together by place, grading, breeding history, and the table in Gifu.
