Joshu Beef begins with Gunma’s terrain. The Tone River water system and the three Jomo mountains, Akagi, Haruna, and Myogi, frame a cattle-raising region whose beef was known in Tokyo and other consumer areas by the old regional name Joshu. Today the name points to crossbred cattle, final and longest fattening in Gunma, handling through the Gunma Prefecture Meat Wholesale Market, and a table character built around umami-rich lean meat and good fat.
Gunma’s cattle landscape is often introduced through the Tone River water system. Together with Mount Akagi, Mount Haruna, and Mount Myogi, that setting gives Joshu Beef a clear place image; the older name Joshu traveled with Gunma beef into Tokyo and other consumer areas, linking a regional name with meat from the prefecture.
In 1976, Gunma Keizairen, now Zen-Noh Gunma Prefecture Headquarters, and a council of cattle-fattening farmers in the prefecture positioned beef at meat quality grade “jo” or above as Joshu Beef. That step tied the name to producers, grade, and Gunma cattle rather than leaving it only as a market nickname.
The current boundary separates Joshu Beef and Joshu Wagyu by breed type. Joshu Beef refers to crossbred cattle, especially Black Wagyu crossed with dairy breeds such as Holstein, born in Japan, with final and longest fattening in Gunma, normal slaughter processing through the Gunma Prefecture Meat Wholesale Market, and meat quality grade 2 or higher.
A farm described by Gunma Prefecture keeps about 150 cattle and changes feed according to growth stage, with attention to the stomach and rumen microorganisms. Clean, soft bedding is part of reducing stress in the cowshed, and in that farm example cattle are shipped at roughly 24 to 30 months of age.
Gunma describes Joshu Beef through umami-rich lean meat and good-quality fat. One preparation uses a thick steak brought back toward room temperature, salt and pepper on one side, and rendered beef fat folded into garlic, rice, and butter so the accompanying rice carries the aroma of the same steak.
Some names within the Joshu Beef family point to smaller places in Gunma. Nitta Beef is connected with producers of JA Nittagun in Ota, while Haruna Sanroku Beef is connected with producers in Shinto and Yoshioka near Mount Haruna; these names show how the broader family includes local producer communities inside the prefecture.
The shape of Joshu Beef comes from concrete boundaries: the Tone River system, the three Jomo mountains, fattening in Gunma, the prefectural meat wholesale market, crossbred cattle, and meat grading. From feed adjusted in the cowshed to steak fat turned into garlic rice, the name gathers terrain, farm work, and a plate of beef into one regional line.
